INGREDIENTS:


a chopped onion

2 chopped tomatoes

2 tbsp olive oil

2 sweet potatoes, peeled and cut into cubes

a cup of cooked chickpeas

a cup of cooked butter beans

a cup of cooked red beans

2 cups mushrooms

2 cups spinach

fresh parsley

salt and pepper


preparation time: 15 minutes

total time: 30 minutes

serving size: 6 serves


METHOD:

In a large size pot pour the olive oil, add the onion and leave it to cook at medium heat until soft, then add the chopped tomatoes, cook for 3 minutes more, once the tomatoes are soft add the sweet potatoes, chickpeas, beans, mushrooms and spinach, add salt and pepper give it a good stir and cover the veggies with water, cook for around 30 minutes until the sweet potato is soft.
I love to serve it with fresh parsley and bread as a side so good! I hope you like it!
