It is HALLOWEEN! To celebrate I made some delicious scary vegan shortbread halloween cookies, just kidding, they aren´t scary at all 🙂
The flavors that I put on this yummy vegan shortbread halloween cookies are ginger, black chocolate, vanilla and turmeric. The texture is exactly as shortbread ones with a delicious taste to ginger, love ginger in cookies, so delicious!
The mix with this delicious base and the black chocolate is really interesting, the spiciness of the ginger with the strong black chocolate is just insane.
These vegan shortbread halloween cookies are crunchy and a bit spicy.
3/4 cup coconut margarine
1 tso vanilla paste
1/2 cup raw cane sugar (muscovado)
2 & 1/2 cups rye flour
1 tsp grated ginger
20g chocolate bar, I used 80% cacao
2 tbsp coconut margarine
1 tsp turmeric powder
preparation time: 30 minutes
total time: 1 hour
serving size: 6 serves
In a food processor, add all the ingredients listed above for the vegan shortbread halloween cookies, margarine, vanilla, sugar, flour and ginger, mix it well.
Wrap the mix in a plastic film and leave it in the fridge for 10 or 15 minutes.
Straight the dough and the use your favorite cookie cutter to make the shape that you like the most and then place the vegan shortbread halloween cookies on top of a tray covered with baking paper.
Turn on the oven to 170ºC for around 10 minutes, then cook your vegan shortbread halloween cookies for around 15 minutes until golden.
Once the vegan shortbread halloween cookies are ready, leave them to chill out for 15 minutes.
Melt the chocolate and dip some of the cookies, then leave them to chill out.
To make the turmeric vegan shortbread halloween cookies, melt the margarine and them mix it with the turmeric powder, then just cover some of the cookies with this mix.
Leave all the cookies to chill until the toppings are dry.
