VEGAN PASTA WITH SPICY ZUCCHINI, PARMESAN AND BASIL

Hi guys! Everyone loves pasta, right? This vegan pasta with spicy zucchini, parmesan and basil it is just so delicious.

I wanted to make a big batch of pasta for the week ahead but I really wanted a tasty spicy pasta, I hate when I make a big batch of pasta and then, there is no flavor at all!

The key is to make a really delicious spicy zucchini, this will definitely make the difference, I´ve never tried zucchini on this way before, I had 2 zucchinis at home and I thought it would be a nice way to use them.

This parmesan cheese is so amazing! As soon as I opened the packaging you really think that is cheese and you bought cheese by mistake hahaha, but it is not! It is vegan cheese, I love the taste and the concept of the product if you can have vegan parmesan tasting like parmesan, why you would buy the regular one? This option is healthier and cruelty-free 🙂 and… the price tag is like the regular ones, so there are no excuses.

This recipe is super easy and delicious, I really hope you like it!


INGREDIENTS:


2 regular zucchinis

1/3 cup olive oil

juice of a lemon

2 tsp ground pepper

2 tsp smoked paprika

a garlic head

a tsp Maldon salt

500g radiatore pasta (radiatore is the name of the shape, you can use any pasta that you like)

a tsp chili flakes

a bit of hot pepper sauce

fresh basil

vegan parmesan cheese


preparation time: 15 minutes

total time: 30 minutes

serving size: 6 serves


METHOD:

Let´s start by preheating the oven to 200ºC.

I use a mandolin to create the sliced zucchini if you don´t have one just cut the zucchini in thin slices.

Peel the garlic head and chop it in small pieces.

Place some baking paper on a big size baking tray, place the zucchini slices and sprinkle the chopped garlic, top them as in the picture with olive oil, lemon juice, ground pepper, salt and smoked paprika, cook them for around 30 minutes in the oven, make sure that you mix a bit the zucchini to avoid getting burnt.

Fill a large pot with hot water, once the water starts to boil pour the pasta and cook it following the package instructions.

Once the pasta is ready and the roasted zucchini is nice and golden, mix it all, if necessary add a bit more olive oil to the pasta.

Then sprinkle some chili flakes and add some hot pepper sauce, vegan parmesan and top it all with fresh basil!

This recipe is so tasty! and you are eating a lot of savory and healthy zucchini and also garlic!
