VEGAN HALLOWEEN DONUTS

Happy Halloween! To celebrate I wanted to make something easy and fun to make, this recipe is perfect. Love Vegan Halloween Donuts, I like to make them every year.

I love this recipe because the donut is really easy to make and it is quite healthy, you can choose what toppings you would like to put and customize it as much as you want.

Love how fun is to add the different toppings, I think this recipe is really good also to make with kids as they can play around and creating their own version.


INGREDIENTS:


2 tbsp chia seeds

1/2 cup almond milk

1/2 cup brown sugar

1 cup oat flour

1/4 tsp baking soda

1/2 tsp Himalayan salt

1 tsp baking powder

1/2 vanilla pod

4 tbsp melted coconut oil

2 tsp apple cider vinegar

2 tsp lemon zest

2 tbsp lemon juice

optional:

chocolate

orange food colorant

candy eyeballs


preparation time: 40 minutes

total time: 1 hour

serving size: 8 serves


METHOD:

Mix the chia seeds with the almond milk and leave them overnight to get the jelly consistency, this mix will work as our vegan eggs.

Preheat the oven to 200ºC.

In a large bowl mix the brown sugar, oat flour, baking soda, Himalayan salt, and baking powder.

In a food processor mix the vanilla, the chia egg mix that I just made the night before, 3 tbsp melted coconut oil, apple cider vinegar, lemon zest, and lemon juice. Then add the dry ingredients that I just mixed in the bowl, then give it a good mix to make sure that you get an even texture.

Put some coconut oil in the donut mold, fill the mold with the dough and bake them at 180ºC for 12 minutes until golden.

Once done you can use your favorite toppings, for this recipe I use some chocolate, orange food colorant, and candy eyeballs.
