Vegan Christmas Dinner | Spicy Sweet Potato Stew

As Christmas Day is coming I am preparing some vegan Christmas dinner alternatives, this spicy sweet potato stew is really delicious and perfect for vegan Christmas dinner or for non vegans as well! it is warm, spicy and really delicious. It is perfect to have as first plate. It has a variety of ingredients which make this spicy sweet potato stew really healthy.

Make sure that you serve with a hearty bread, it will be even more delicious!

INGREDIENTS:


1 kg sweet potatoes

800g boiled  and drained beans

200g baby spinach

800ml fresh water

2 tomatoes

2 cups tomato sauce

5 garlic cloves

1/2 red onion

2 leeks

4 tbsp olive oil

2 tsp cumin

2 tsp dried coriander

2 tsp paprika

1 tbsp tahini

a fresh chili – if you don´t like spicy you could omit the chili or add half of a chili or even less

juice of 1 lime

large bunch of fresh chopped coriander

salt & pepper

 


total time: 50 minutes

serving size: 8 serve


METHOD:


We will start by peeling and chopping in small squares the sweet potatoes, then we will chop the tomatoes, leeks, onion, garlic and chili. Reserve those ingredients.

In a big size casserole pour the olive oil and heat it, then add the chopped garlic leave it to cook until it is a jut a bit golden, then add the chopped onions and leeks. Cook them at medium heat until the veggies are soft, add the cumin, dried coriander, and paprika stir around and cook it at medium heat for 5 minutes more.

Now it is time to add the sweet potatoes, chopped tomatoes, tomato sauce, fresh water and tahini sauce. Mix it all well! bring to the boil the mix, then cook half covered at medium heat until the sweet potatoes are nice and tender, it will take about 10 minutes. Once the sweet potatoes are tender, just add the spinach, cook for another 5 minutes and then incorporate the beans, lime juice, salt, pepper and chili. Mix all well and half cover the casserole, leave it to cook for 10 minutes at medium heat, stir around and let simmer for another 10 minutes.

I like to serve this spicy sweet potato stew with some fresh chopped coriander in a separate plate, so everyone could add more if they want to.
