I think I just nail these cookies, I can say they are the best vegan chocolate chip cookies I’ve ever made.
They are super delicious and also the texture is perfect, they are like crunchy on the outside and soft on the inside.
The chocolate taste so good! the texture of the chocolate is perfect too.
The key is to add just enough coconut oil but not too much otherwise they will lose the shape.
Also, the cinnamon and nutmeg are optional but they work really well with the dough.
Honestly so good!!
2 cups almonds
a tsp baking soda
a tbsp peanut butter
2 tbsp melted coconut oil
1/3 cup maple syrup
a tsp cinnamon powder
a tsp nutmeg
90g chopped 85% dark chocolate
preparation time: 5 minutes
total time: 20 minutes
serving size: 10 cookies
In a food processor start by blending the almonds until you get almond flour, it will take you around a minute.
Then add the rest of the ingredients except the chocolate, mix until everything comes together, it will take you around 30 seconds.
Preheat the oven to 170ºC.
In a bowl, mix the paste with the chopped dark chocolate, take the size of a tablespoon, form a ball, do the same with the rest of the cookie dough.
In an oven tray place all the vegan chocolate chip cookies and cook them in the oven at 170ºC for around 10 minutes until golden.
Once are golden, remove them from the oven and let them cool down to harden up.
