VEGAN CHOCOLATE CHEESECAKE WITH BERRIES

Happy Valentine´s Day! ❤️ I wanted to share with you this beautiful recipe to give you some inspiration for Valentine´s Day or any other day.

I know it is on the 14th of February but I wanted to share a delicious and beautiful recipe for you to make with time!

This chocolate cheesecake is really creamy, sweet and the berries work really well with the chocolate, it is always a winning combination.

Chocolate Cheesecake Vegan The White Chestnut


INGREDIENTS:


for the base:

a cup of hazelnuts

1/3 vanilla bean

a cup of pitted Medjool dates

1/4 cup coconut oil

3 tbsp maple syrup

for the chocolate tart:

2 cups hazelnut milk

6g agar agar

2 cups cashews

1/2 vanilla bean

1/2 cup maple syrup

a pinch of sea salt

3/4 cup of cacao powder

a banana

toppings:

a cup of berries


preparation time: 30 minutes

total time: 2 hours 15 minutes

serving size: 8 serves


METHOD:

We are going to start by making the base of this delicious chocolate cheesecake, in a food processor blend a cup of hazelnuts, 1/3 of vanilla bean.

Once blended add a cup of pitted Medjool dates, 1/4 cup of coconut oil and 3 tablespoons of maple syrup, mix it well until the consistency is sticky, add more dates or maple syrup if needed in order to get this sticky consistency.

Once mixed, pour the mix into a round mold and press it down to make sure that is even and firm, keep it in the fridge to harden a bit whilst we make the chocolate.

To make the chocolate, in a medium-size casserole pour 3 cups of hazelnut milk or any other milk of your choice and 6g of agar-agar, boil it for 10 minutes.

In a blender, add 2 cups of cashews, 1/2 vanilla bean, 1/2 cup of maple syrup, a pinch of sea salt, 3/4 cup of cacao powder, the boiled milk with the agar-agar and a banana. This consistency should be even and really creamy as shown in the video 🙂

Pour it over the base and leave it in the fridge for around 2 hours.

To finish it all, we are going to add some toppings, for this recipe, I added some berries making a heart shape but you are free to make any other shape or simply add the berries.

Hi! Can I substitute agar agar strings with powder? How much agar powder should be used?
