THAI COCONUT CURRY NOODLE SOUP

These coconut curry noodles are super delicious, I always enjoy warm soups mixing different flavors, I find this noodles works wonders in cold days when you just need a really full filling lunch or dinner.

The coconut and curry works amazing and I truly love noodles so this is a winner, I love so much asian food, the different flavors and textures, when I am going out and have thai food I almost always discover new yummy flavors.

This curry noodle soup is easy, vegan, delicious, full filling, the butter beans are super yummy and also this recipe is full of goodness.

THAI COCONUT CURRY NOODLE SOUP


INGREDIENTS:


3 tbsp coconut oil

1/2 red onion, sliced

3 tbsp soy sauce

1/2 tsp Himalayan salt

a tbsp curry powder

a cup of white butter beans cooked

1/2 cup frozen green peas

a coconut can

3 cups of water

300g noodles

fresh coriander

some black sesame seeds


preparation time: 5 minutes

total time: 25 minutes

serving size: 4 serves


METHOD:


In a wok pan or a medium size casserole, start by warming up the coconut oil at high heat, cook the red onion until soft.

Then add the white beans and green peas, cook for a couple of minutes, then add the soy sauce, curry and salt.

Add the coconut can and mix, pour 3 cups of water and boil it, once the liquid is boing, simply add the noodles and cook them until ready to serve.

To serve this delicious noodles, top it with some fresh coriander and black sesame seeds.
