I usually don´t make salads, but this raw vegan avocado salad with yummy dressing is so easy.
One of my goals this year is to make easy vegan recipes that takes almost the same amount of time to make them than to eat them 🙂
I love how delicious and fresh this salad is, you could add also grapefruit and it will work amazing, I think that will be my next salad recipe, grapefruit avocado salad.
This raw vegan avocado salad is delicious, savory, fresh, easy to make and the dressing is super yummy, the mix of soy sauce with peanut butter is so delicious! It is perfect, also by adding some lettuce you´ll have even more goodness on the salad, to add a bit of texture I put some pumpkin seeds.
1 & 1/2 ripe avocados
juice of 1/2 lemon
a tbsp peanut butter
1/ 4 cup soy sauce
a tbsp maple syrup
a cup of lettuce of your choice
a tbsp pumpkin seeds
a pinch of pepper
preparation time: 10 minutes
total time: 10 minutes
serving size: 1
Start by removing the skin of the avocados and cut each avocado in four pieces, for this recipe I use one avocado and a half.
Then , add the juice lemon to the avocados.
To prepare the sauce of the salad, simply mix the peanut butter, soy sauce and maple syrup.
Mix the pieces of avocado with the sauce and the lettuce, then add some pumpkin seeds and pepper, enjoy!
