PESTO PIZZA RECIPE

This crunchy pesto pizza is loaded with lots of flavors, delicious, perfect for Friday night 😉 or any day really… Love how light and savory is, full of veggies, pesto and the avocado-lime sauce, the list of the ingredients is telling you all.

This is my favorite crunchy and light pizza, ah! the rocket on top is just perfection!

PESTO

INGREDIENTS:


1 garlic clove

a pinch of Himalayan salt or sea salt

2 handfuls of basil

1/2 cup of cashews

1/4 cup of cold press extra virgin olive oil


 

METHOD:


Mix all the ingredients in a food processor and adjust in case you need it.

Notes

If you keep it in an airtight container in the fridge it will lasts three days. Bon appetite! 

AVOCADO-LIME SAUCE

INGREDIENTS:


1 cup almond milk

1 avocado

the juice of a lime

1 tbsp of agave syrup

1/2 tsp black pepper


 

METHOD:


Blend all the ingredients until you get a nice and smooth consistency.

DOUGH & TOPPINGS

INGREDIENTS:


2 tbsp active dry yeast

2 tbsp Himalayan salt

3 & 1/2 cups of rye flour and a bit more to knead

2 tbsp cold press extra virgin olive oil

1 cup of water, slightly warm

toppings for the pizza:

12 asparagus

1/2 cup sliced cherry tomatos

1/4 sliced red onion

the juice of 1/2 lime

2 tbsp cold press extra virgin olive oil

a handful of rocket


 

METHOD:


1.Mix all the ingredients listed for the dough, once you get the dough, cover with a plastic film or a fabric, set aside for 1 hour.

2.The dough will approximately double the size, I use all the dough as my oven is pretty big, check just in case you need to make 2 pizzas instead of a big one.

3.In a clean surface, add some flour and gently knead the dough.

4.I prefer to cook a bit the pizza base and then add the rest of the ingredients. To make this pizza I baked the base of the pizza for approximately 7 minutes at 200ºC.

5.After that, add 1/2 cup of pesto, asparagus, sliced cherry tomatoes, some red onion, the juice of 1/2 lime and 2 tbsp of olive oil. Bake for 10 minutes at 200ºC.

6.Once the pizza is cooked, is time to add some rocket and your delicious avocado-lime sauce!

7.Now you are ready to serve this beautiful and delicious Pesto Pizza! I really hope you like it, it took us literally 10 minutes to eat this yummy Pesto Pizza 😉

This looks really great! I love the idea of replacing a red sauce with pesto, and I love cashews. I have been trying to cook at home more, and pizza would be great for my family. I will have to give this pizza a try, thanks for sharing!
