MARINATED MEDITERRANEAN OLIVES WITH POMEGRANATE

I love so much olives that I wanted to make a easy vegan recipe with them for festive periods, so I made this yummy marinated mediterranean olives with pomegranate.

MARINATED AND BAKED MEDITERRANEAN OLIVES WITH POMEGRANATE SEEDS
I choose three different types of olives, you can choose your favourite ones.

This olives have so much flavour due to the marinated, I left them overnight in a jar with the ingredients that you´ll find below, the taste is absolutely delicious.

To get even more flavour I decided to bake them and it really works! It helps to release all the oils and flavours from the olives.

The pomegranate seeds really helps to bring some freshness to this delicious recipe, I really enjoyed both of the flavours together.

INGREDIENTS:


1 cup green olives

1 cup black olives

1 cup brown olives

1/3 cup olive oil

1/4 cup lemon juice

3 garlic cloves

fresh rosemary

fresh thyme

1/2 tsp ground pepper

1/3 tsp Himalayan salt

optional:

1 cup of pomegranate seeds


preparation time: 5 minutes

total time: 15 minutes

serving size: 4 serves


METHOD:


Use a pestle and mortar to crush all the ingredients, just a bit, don´t get mad, it will help to mix all the flavours, then pour it in a jar and leave it overnight to marinate.

You can serve it at room temperature or as I did put them in the oven for 10 minutes at 200ºC, it will help to release all the flavours.

Then mix with with the fresh pomegranate and enjoy!
