BLUEBERRY PANCAKES

Happy pancakes day! I really love pancakes, so sweet and fluffy perfect breakfast for the weekend.

I love to try new ingredients on my pancakes with different fruits but my favourite ones are with blueberries, I love the freshness from the blueberries.

For this recipe I defrosted blueberries instead of using fresh ones as the fresh ones on the market were too big! 🙂

INGREDIENTS:


pancakes:

a banana

a cup of flour

a pinch of salt

a tsp baking powder

a tbsp maple syrup

a tsp cinnamon

2 tbsp coconut oil

1 & 1/2 cups almond milk

1/2 cup blueberries

toppings:

a cup of blueberries

a cup of strawberries

a banana

2 tbsp pumpkin seeds

maple syrup


preparation time: 15 minutes

total time: 15 minutes

serving size: 2 serves


METHOD:

Simply add all the ingredients listed for the pancakes and blend them as shown in the video.

Pour the dough in a bowl and then add the blueberries and stir.

In a medium or small size pan add some oil, once warm, pour 2 tablespoons of the dough and cook until golden.

Add toppings of your choice! I add some banana, strawberries, blueberries, maple syrup and pumpkin seeds.
