This savory homemade vegan pesto pizza taste delicious.
The homemade dough it really makes a huge difference in the taste of the final product, the juicy pesto has so much flavor in it, and the cherry tomatoes add some freshness to this beautiful and healthy vegan pesto pizza.
This is one of the recipes where you just put a few ingredients, when you put them right and well made, it tastes amazing!
By the way, if you don´t want to make the dough of the pizza or the pesto just make sure you buy a high quality ones that doesn’t have any weird ingredient.
for the pesto:
a garlic clove
a pinch of Himalayan salt or sea salt
2 handfuls of basil
1/2 cup of cashews
1/4 cup of cold press extra virgin olive oil
for the base of the pizza:
2 tbsp active dry yeast
2 tbsp Himalayan salt
3 & 1/2 cups of rye flour and a bit more to knead
2 tbsp cold press extra virgin olive oil
1 cup of water, slightly warm
2 cups of sliced cherry tomatoes
2 tbsp dried oregano
preparation time: 20 minutes
total time: 1 hour 30 minutes

Let´s start by preparing the pesto, mix all the ingredients in a food processor until you get a creamy texture.
To prepare the dough, mix all the ingredients listed for the dough, once you get the dough, cover with a plastic film or a fabric, set aside for 1 hour.
The dough will approximately double the size, I use all the dough as my oven is pretty big, check just in case you need to make 2 pizzas instead of a big one.
In a clean surface, add some flour and gently knead the dough.
I prefer to cook a bit the pizza base and then add the rest of the ingredients. To make this pizza I baked the base of the pizza for approximately 7 minutes at 200ºC.
Then add some pesto and the cherry tomatoes, sprinkle some oregano and cook until golden at 200ºC for about 15 minutes.
