HALLOWEEN TOMATO SOUP
Hi guys! Today I am sharing a super creative recipe for Halloween, I was looking for inspiration and I found the look of this recipe on Pinterest, I had to make my own version, I don´t know who is the owner of the original recipe, I will leave you the link where I found the inspiration 🙂
1kg of tomatoes
a small pumpkin
4 garlic cloves
2 tbsp olive oil
1/3 cup unsweetened vegan yogurt
6 black olives
Preparation time: 10 minutes
Total time: 40 minutes

Let’s start by roasting the veggies!
This time I am partnering with Le Creuset, I had the pleasure to try their new oval 31cm casserole to make this recipe.
Preheat the oven at 200ºC, whilst you prepare the veggies.
Wash the tomatoes and pumpkin.
Cut them into small pieces, chop the garlic and add them into the oval casserole or into an oven tray.
Sprinkle some olive oil, fresh oregano and the juice of a lemon, cook for around 30 minutes until soft.
The veggies are more delicious when you cook them at low temperatures, so don´t be tempted to increase the temperature of the oven.
Once they are ready, simply blend them until you get a creamy consistency, them serve it in a large bowl or as I did, I wash them a casserole and serve it.
Then to make the spiderwebs, pour the yogurt into a pastry bag, make circles from the center, using a toothpick goes from each circle outwards.
To make the spiders, I use one olive as the body of the spider and cut some slides as spider legs 🙂
