GNOCCHI PASTA SALAD WITH HOMEMADE RAW VEGAN PESTO

 

To me, this is one of my ideal recipes because you can have it in winter as well as in summer, I’ve made it a lot of times, but still I can’t get enough of it, is so simple and delicious!

In winter, once the recipe is done I like to warm it a bit in a pan, at medium heat to really mix all the flavours and the goodness from the ingredients and in summer I like to have it really cold and take it with me when I am going to the beach, it is definitely my favourite recipe to take away in summer time!

INGREDIENTS:


For the Raw vegan pesto

¾ cup of ground Brazil nuts

¼ cup of cashew nuts

¼ cup of hazelnuts

½ cup of fresh basil

¼ cup of lemon juice

¼ cup of olive oil

2 cloves of garlic

3 dried tomatoes

A pinch of Himalaya salt

A pinch of black pepper

A pinch of chilli flakes

For the Pasta salad

2 cups of organic whole wheat gnocchi (You can have any pasta but this, is one of my favourites, and it is healthier than the white pasta because it has more nutrients and fibre in it)

1 cup of cherry tomatoes cut in halves

8 chopped leafs of basil


Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Serving Size: 2 serves

METHOD:


1 Add the water to the boiling water in an open pan and cook for approximately 10’, depending on the shape until tender and firm for that perfect ” al dente ” texture.

2 Meanwhile, in a food processor just add all the ingredients for the Raw vegan pesto and blend it for 5 minutes until you get a smooth and even texture, if the pesto is to thick you can add more olive oil to the mixture and if it is too thin you could add more nuts, but usually this recipe works perfectly for me. You could make around 1 cup and a half of pesto with the ingredients above.

3 Drain the pasta and add as much pesto as you like, then add the chopped tomatoes and the chopped basil.

4 If you want to have it cold, you can just leave it as it is, but if you prefer it warm, I would put 1 tablespoon of olive oil in a pan and leave it at medium heat for 10’, is amazing how the flavour changes, so delicious. Buon appetite!
