GARLIC DOUGH BALLS WITH VEGAN CHEESE

I love this garlic dough with vegan cheese and grapes, I think it is the perfect entree for family dinners, I believe everyone will enjoy it!

The garlic dough balls are so delicious, I put as well some thyme in the garlic dough balls, the flavor is honestly amazing. The vegan creamy cheese just makes the perfect combination, this creamy cheese is so delicious, the grapes adds some freshness to the recipe.

I love how the grapes combine so well with the garlic dough balls and the vegan cheese, this is just so simple, the difficulty is just into making the little balls for the garlic dough balls, the rest is really easy.

GARLIC DOUGH BALLS WITH VEGAN CHEESE


INGREDIENTS:


2 1/4 tsp active dry yeast

1/3 cup almond milk

1 cup unbleached all-purpose flour

1 & 3/4 cup bread flour

3/4 cup aquafaba ( the liquid of the chickpeas)

1/4 tsp Himalayan salt

3 tbsp maple syrup

3/4 cup extra virgin olive oil

1/2 garlic

1 tbsp dried thyme

mixture to make the garlic doughs shine:

1/3 cup aquafaba

1/2 tsp Himalayan salt

vegan creamy cheese:

1 cup almond milk

1/2 cup cashews

1/3 cup nutritional yeast

juice of 1/2 lemon

1/2 tsp Himalayan salt

optional:

some grapes

chilly flakes


preparation time: 45 minutes

total time: 1 hour 15 minutes

serving size: 4 serves


METHOD:


Let´s start by preparing this yummy garlic dough balls, mix the active dry yeast into the warm almond milk. Leave the yeast to activate for 15 minutes.

Once the yeast is activated, pour the mix into a food processor, add the aquafava, mix it well, then add maple syrup, salt, olive oil, garlic and thyme, once this is well mixed, then pour the flours.

You´ll get a nice dough, in a clean floured surface knead for 5 minutes.

Then, in a big bowl pour some olive oil and then leave then dough for 90 minutes to rise, cover it with some plastic film.

When I am making doughs, I usually just leave it overnight, but with 90 minutes is enough.

To prepare the creamy cheese, in a blender just add all the ingredients and mix until is soft and creamy, you can warm it up to serve if you prefer. Then top it with some chilli flakes and thyme.

Once the garlic dough is ready to use, knead it and make little balls, leave a space in the center and start by putting balls around making circles as in my picture.

Once you have the desire shape, cover it with some plastic film and leave to rise another 30 minutes.

In a small bowl, mix some aquafaba and salt, then top the garlic dough balls before cooking them in the oven.

5 minutes before the cooking, preheat the oven to 200ºC, cook it for 25 minutes approximately until golden.

To serve, just place a bowl in the center of the garlic bread rolls and add as a side some grapes.
