I´ve been thinking to make these delicious dark chocolate coconut cups for so long! I was thinking that they would be really difficult to make until last week I just bought some baking cups and decided which ones would be my favorite flavors. I went for dark chocolate and coconut. But I think dark chocolate with mint or with ginger would be as well really delicious – those will be the next ones for me to make 🙂
As I said these dark chocolate coconut cups are super easy to make, you just need to have the right proportion of liquids and solids, from there you can play with different flavors as you like.
The flavor of these dark chocolate coconut cups is super delicious and rich, I do love to have them with my black tea. The dark chocolate is melting really quick in your mouth, the flavor is really concentrated and the himalayan salt works amazingly well with the dark chocolate. The mix of dark chocolate with coconut is just the perfect mix of salty and sweet, but don´t think that the dark chocolate is really salty just a bit.
You can make them and leave them in the fridge for a good 4 days. They are delicious and beautiful, I think these dark chocolate coconut cups are perfect to share with some friends, family… with a nice cuppa or coffee.
3/4 cup oats
3 tbsps coconut oil
1 tsp cinnamon
2 tbsp agave nectar
200 grs dark chocolate
A pinch himalayan salt
1 tbsp desiccated coconut
1 tbsp cocoa nibs

Cook Time: 5 minutes
Total Time: 15 minutes
Serving Size: 12 cups
1 Place 12 baking cups on a tray, I just went for a paper ones, but you could use any type.
2 Pour in a bowl: 3/4 cup of oats, 2 tablespoons of melted coconut oil, 1/2 teaspoon of cinnamon and 1 tablespoon of agave nectar, you could use maple syrup, coconut nectar or any liquid sweetener. Mix all the ingredients.
3 Put 1 teaspoon of the mix in each baking cup, leave them in a side.
4 Melt 200 grams of dark chocolate, for this recipe, I use 85% dark chocolate.
5 Pour the melted chocolate in a bowl, add a pinch of himalayan salt, 1/2 teaspoon of cinnamon, 1 tablespoon of agave nectar and 1 tablespoon of melted coconut oil, mix the liquid mixture.
6 Fill the baking cups and sprinkle them with 1 tablespoon of each desiccated coconut & cocoa nibs.
7 Put the dark chocolate coconut cups in the freezer for 30 min to cool. Enjoy!
