COCONUT PORRIDGE RECIPE

As the colder weather is coming I´ve been experimenting with new porridge recipes, to me this coconut porridge is a winner.

I do love coconut and I could say that coconut porridge is my favorite at all times. This creamy coconut porridge is so yummy, it has some of my favorite ingredientes, of course coconut water, coconut chips and peanut butter, so delicious!

If I have a bit of a time in the morning of course I´ll go for it, this coconut porridge it is super creamy and soft, the apple works amazing bringing freshness to the coconut porridge.

If you don´t have much time in the morning to prepare your coconut porridge just through all the ingredients in a glass jar and leave it overnight, then in the morning you can have it cold or warm it up, as I would do. But just make sure that you don’t skip breakfast 😉

I can see myself waking up in the coldest months and making me a bowl of this delicious coconut porridge, that is hygge for me in a bowl and of course with a cup of tea, yes!

Winter is better with delicious bowls that keep you full in the morning.

COCONUT PORRIDGE


INGREDIENTS:


3/4 cup coconut milk

1/4 cup coconut water

1/2 cup oats

1/2 sliced apple

1/2 cup coconut chips

2 tbsp peanut butter

2 tbsp maple syrup and some more to top if you like

a pinch of salt


preparation time: 15 minutes

total time: 15 minutes

serving size: 2 serves


METHOD:


In a medium heat add coconut milk, coconut water, oats a pinch of salt and 2 tbsp of maple syrup, stir it until boiling, then pour it in your favorite bowls.

Top it all with some sliced apple, coconut chips, peanut butter and some more maple syrup if you like.
