Today I am sharing this vegan chocolate cake with berries.
This chocolate cake is filled with berries for freshness and covered with vegan chocolate icing, super creamy and easy to make, for extra freshness, I top it all with some berries.
This vegan chocolate cake with berries is sweet, creamy, fresh and so delicious!
I´ve been having this cake for breakfast last week, along with my celery juice and coffee, it feels so good to wake up and have this delicious and beautiful cake for breakfast!
I prefer it warm as the berries that go into the cake are even more delicious.

1 & 1/2 cups of almond milk
1/2 cup of olive oil
3/4 cup cocoa powder
2 cups spelt flour
3/4 cup brown sugar
3 tsp baking powder
1 tsp baking soda
1/2 vanilla bean
1/2 tsp sea salt flakes
1 tbsp cinnamon powder
1 tsp grated ginger
a cup of mixed berries
1/4 cup cacao
2 tbsp maple syrup
a cup of currants or berries of your choice
preparation time: 15 minutes
total time: 1 hour
serving size: 6-8 serves
Blend all the ingredients except for the mixed berries into a food processor, make sure that the texture is even.
In a mold, pour half of the content, then sprinkle the variety of berries and pour the other half, cook in the oven at 175ºC for 40 minutes.
Leave it to cool down before adding the icing.
To make the icing, simply mix the avocado, bananas, cacao and maple syrup. Then cover the cake evenly, to finish top the cake with some currants or berries of your choice.
