Listen to me, you have to try these cookies! 🙂 This are the best ever vegan almond cookies with raspberry jam, honestly this is just another level of goodness.
You have to make them because, they taste amazing, they are super easy to make with 7 ingredients, they cook in the oven in 10 minutes, amazing, I could be eating just these cookies.
They are crunchy in the outside, super juicy in the inside, sweet, creamy… if any of you have tried the almond croissant from Pret A Manger, these cookies taste so similar!
The best thing is that they are made with almonds, just that… you easy and delicious!
1 cup unsalted almonds
1/2 tsp baking soda
1/3 tsp sea salt
1/3 cup coconut oil
1/3 cup maple syrup
a tbsp vanilla extract
5 tbsp raspberry jam ( I bought a pure organic one, make sure that it doesn’t have nasty ingredients)
preparation time: 10 minutes
total time: 20 minutes
serving size: 11 cookies
Start by preheating the oven to 250ºC.
In a food processor blend the almonds, baking soda and salt for 3 minutes until the almonds are really thin.
Then add the coconut oil, maple syrup and vanilla, blend for another 2 minutes.
Cover a baking tray with baking paper, taking a tablespoon size, start by making balls, as if you were going to make energy balls.
Then using your finger, just make a little hole in the middle, you´ll fill that hole with the raspberry jam.
Do the same process until you finish the dough.
Cook at 200ºC for around 10 minutes until golden in the inside, then leave them to cool, they will harden and they will be even more delicious 🙂
